At Biofach 2022 Salumificio Pedrazzoli presents the preview of its new exclusive organic specialty: Montanera, of Black Iberian Bellota Pig for the PrimaVera line.

Salumificio Pedrazzoli returns to Biofach in Nuremberg once again in this 2022 edition, July 26-29, to present an exclusive preview of the new Montanera organic line of Black Iberian Bellota Pig: a line of healthy, organic products with exceptional flavor encapsulating the values of craftsmanship, tradition and respect for natural rhythms and tastes.

 

MONTANERA

Montanera is Salumificio Pedrazzoli’s most recent project: a journey of discovery of the black Iberian bellota pig, an excellence in Spanish breeding and charcuterie that perfectly matches the organic philosophy, a cornerstone of Pedrazzoli’s production.

The particularity of this product concerns the optimal living condition of the animal. The Iberian pig typically lives in dehesa, exclusively outdoor environments rich in forests and pastures. For a certain period of the year – namely, montanera – the Iberian pig lives on more than three hectares of land per animal, feeding from November to March exclusively on acorns and fresh grass that it manages to find on its own in the dehesa. To respect the product and the grazing period, slaughtering takes place only once a year, precisely at the end of the montanera. This is what makes exclusive the production, the opportunity to taste and pre-order the product during all the Bio Fach days.

 

THE EVENT

Salumificio Pedrazzoli is always full of surprises. On the occasion of this special summer edition of Biofach we will present a preview of the Bellota, paleta di nero iberico, or shoulder of the bellota black Iberian pork ham.

One of our professional cutters will hand-cut the product and tastings will be organized by appointment

Customers attending the Fair will also be given the exclusive opportunity to be able to pre-order products from the Montanera line of bellota Iberian black pork: an exclusivity given not only by the exceptional nature of the product, but also and especially by the limited number of pieces available.

Together with this already rich event is another great return! For the duration of the Bio Fach, once again Daniele Reponi will be present. The gourmet sandwich chef will corroborate the products present with his experience and creativity. In this edition, the product we have chosen for Daniele is another specialty of excellence of our PrimaVera: Mortadella Bio.
