
Farm to Fork: our closed loop production
Our company Salumificio Pedrazzoli was born from the dream of Arnaldo Pedrazzoli, son of a family with long pork butchery traditions. In 1951 Arnaldo established the company in San Giovanni del Dosso, a small town in the Po Plain, in Northern Italy.
Today the company is managed by his descendants, carrying on his work with dedication, always with a look to the future challenges. Just like in 1996, when form the intuition on a young Elisa Pedrazzoli, great-granddaughter of Arnardo, PrimaVera Bio was born, the first like of organic charcuterie made in Italy.
Our company has a short supply chain and closed circuit, a way of thinking production form farm to fork, preferring environment sustainability and food safety.
At Salumificio Pedrazzoli, we own ten farms located in the lands between Lombardy and Emilia-Romagna, in Northern Italy. In our farms animal welfare, sustainability and supply chain control and ensured thanks to Organic Regulation. In Organic farming, we have to breed few porks, which are able to move inside and outside of the stables, we have to auto-produce and grow fodder without using pesticides or chemical fertilizers, and finally we are not allowed to use in a preventive way antibiotics and veterinary drugs, preferring instead homeopathic remedies that have a minor impact on soils fertilized with animal manure.
In 2013 and 2016, for our dedication in managing our farms, we have received the GOOD PIG Award from Compassion in World Farming (CIWF), the international animal welfare charity focused on animals in the food industry, showing to the whole pork industry that it is possible to intertwine production needs and farmed animals welfare.
Raw material is handled in our own production facility where salami and charcuterie are prepared and then left to cook or season. We recently built a new state-of-the-art slicing facility where we prepare the charcuterie PrimaVera trays. In this way we are now able to close the production cycle and trace the product from our farms to your table.
We also apply the idea of short supply chain in making our charcuterie, who are all hand-made in an artisanal way, following the traditional recipes but, at the same time, undertaking continuous research to obtain products without sophistications and each day closer to Nature. With time, in the PrimaVera Bio products we were able to make charcuterie without any preservatives, milk derivatives and gluten, which is why we call them Zeroaggiunti (no added in Italian).
