Il Pampano – Stinco Cotto al Naturale (cooked pork shank) from the Linea Q+ line is made according to a traditional recipe from Modena; it is steam cooked in ovens unwrapped, maintaining its typical flavour, delicately enhanced with rosemary and bay leaf. A small detail which perfectly embodies Salumificio Pedrazzoli’s concept of transparency. Moreover, Il Pampano – Stinco Cotto al Naturale is packaged after cooking, thereby guaranteeing a cleaner product with less fat i.e. a better quality product!
Another of its distinguishing characteristic is the lack of preservatives. In other words, this is a product that comes to the consumer just as if they had cooked it themselves at home.This practice, drawing on Salumificio Pedrazzoli’s longstanding tradition and great experience, makes our Stinco Cotto al Naturale even richer.
PAIRINGS: Serve with traditional sides; an ideal pairing is mostarda in pezzi (traditional chutney with mustard). Goes very well with still, full bodied red wines such as Atina Cabernet Doc.
To oven cook or fry: remove the product from its packaging, cover with foil and heat it in the oven with a little oil for around 30 minutes at 180°C, or fry in a pan with seasonings of your choice; to boil: leaving the shank in its original packaging, boil for up to 20 minutes.
