Our organic Finocchiona Bio is a traditional Tuscan deli meat with a long history. In the medieval period, when black pepper was a rare and costly commodity from the Orient, deli meat butchers and Tuscan peasants would often season their fillings (made from select pieces of ham, pancetta, and pork cheek and shoulder) with red wine and fennel seeds – usually wild fennel, which had a much stronger flavour and could, therefore, better mask any later deterioration of the meat. Even today, small wild fennel seeds are still included in the ingredients; the product is also still made in the same large, generous dimensions as it was centuries ago.
The filling is made up of select pieces of ham, pancetta, and pork cheek and shoulder (from organically farmed pigs), red wine and wild fennel seeds.
RECOMMENDED PAIRINGS: With an intense, spicy fragrance and a savoury, lingering flavour, our LA VOLTERRANA Salame Bio con semi di finocchioo is wonderful with sheep’s cheese and Tuscan bread, or with polenta, torn or cubed and tossed with vegetables. Its intense, spicy fragrance and savoury, lingering flavour make it difficult to pair with wine.
