Luganega, also known as salsiccia, luganica, salsisa or groppino, is the name traditionally attributed to this fresh pork sausage.Although this is a specialty typical of Northern Italy, the origin of the name is usually associated with the common Roman custom of applying the term “lucanica” to sausages originating in Lucania.
Luganega is a long, thin sausage; it is pink in colour and comes in a single size.It is processed in a similar way to salami: the meat and the fat of the pig is minced to a medium-fine consistency and mixed with flavourings (garlic and wine), salt and pepper. When the mixture is well blended, it is stuffed in natural casing with a thin skin (typically, sheep casing). The sausages are hand-tied into a string bound only at the ends. Luganega has a mild pork flavour, and can be spicy in varying degrees depending on the type and quantity of spices used.
PAIRINGS: Luganega is suitable for grilling, but also works well as an ingredient in risottos and filled pasta to add flavour. Lambrusco Mantovano – intense and dry yet sparkling – makes an excellent wine pairing.
