Cooked ham – a cornerstone of the Italian pork tradition – has very ancient roots. According to historical sources, pork haunch cooked in this way was highly prized in ancient Rome. The process involved first boiling the meat with dried figs and bay leaves, before covering it with honey and cooking it in pastry. Roman legionnaires probably picked up this delicious way of processing ham from the Galls and ancient Lombards. It is no surprise that the regions which produce the best quality cooked ham are indeed: Lombardy, Friuli Venezia Giulia, Piedmont, Liguria and Emilia-Romagna. It is natural that the quality of the product should be superior in these regions, where the tradition and experience of producing it go back so far.In fact, the traditional techniques used are not so different from those we use today at Salumificio Pedrazzoli: we are following in the footsteps of a thousand-year tradition to produce our own cooked hams. .
