Prosciutto di Parma has Protected Designation of Origin status. To merit the Parma Ham crown (the stamp reserved for genuine PDO Parma Ham), the product must be made with only fresh haunches from well-reared pigs; it must be very carefully and attentively monitored during maturation, and have developed the unmistakeably mild flavour. The only ingredient permitted for use in processing Parma Ham is salt; the product may not be smoked or frozen. Salumificio Pedrazzoli’s organic Prosciutto di Parma Bio is produced entirely without preservatives. The only raw materials we use are: quality meat, the right amount of sea salt, time (maturation lasts 16/18 months) and lots of fresh, dry air.
RECOMMENDED PAIRINGS: Although Parma Ham is often eaten raw as an hors d’oeuvre, sliced more or less finely according to taste, it is also a main ingredient in more complex recipes, such as classic tortellini. It is best enjoyed as it is, or with fresh fruit such as figs or melon. Parma Ham goes well with aromatic white wines, included lightly sparking varieties such as Malvasia dei Colli di Parma or Malvasia Istriana, but can also be enjoyed with light, fruity reds.
