Salame Cacciatore Bio PDO is a small salami, so named after the hunters (cacciatori) who would typically pack many of them on hunting trips as a tasty and nutritious food, rich in first-class proteins.
Made from lean organic pork – striated muscle tissue – hard fat, salt, cracked or ground pepper and garlic, Salame Cacciatore PDO are hand-tied in natural casings. These small salami can be tied into strings of up to 35 cm.Minimum maturation 21 days. In 2001 “Salamini Italiani alla Cacciatora” obtained PDO status.
RECOMMENDED PAIRINGS: Their smaller size makes them a perfect ready-to-eat bite for picnics or snacking. They make perfect hors d’oeuvres, cut into thick slices and served with crusty bread. Their delicate aroma and lightly spiced flavour goes perfectly with white wines such as Colli Piacentini Ortrugo, and young, lively red wines, like Oltrepò Pavese Bonarda, Fresia del Piemonte or Colli Piacentini Gutturnio.
