HISTORY: The ultimate Salame Piccante Bio is a salami from the Calabrian tradition. It is prepared in various ways: either tied in the characteristic horse-shoe shape or straight, cylindrical or the flattened soppressa schiacciata; but regardless of the shape, this sausage is distinguished from other salami by the unique combination of its ingredients (chili, hot red pepper, and black and red pepper corns), which make it very spicy.
PROCESSING: It is hardly surprising that the recipe for a salami from Calabria should start with a good dose of chili, mixed together with pork shoulder and pancetta (from locally reared pigs). The ingredients can also include wild fennel, garlic and, occasionally, bell peppers as well.
RECOMMENDED PAIRINGS: Particularly recommended as an aperitif, starter or snack, these sausages are also used as a special pizza topping. We recommend pairing it with red wines, well-aged in the bottle, with the right acidity and sapidity, low tannin astringency and an intense, well-developed bouquet of ripe fruit and spice aromas, such as Roero Rosso, Solopaca Aglitico and Cirò di Calabria.
