More on Salsiccia Bio Piccante from Salumificio Pedrazzoli’s Linea Primavera organic range
Adhering to the strict Calabrian tradition, this sausage is prepared using nothing but pork shoulder and pancetta from heavy pigs. Expertly seasoned with black and red pepper, mild or spicy, the meat is filled into natural pork casing and tied in the typical “horse shoe” shape. Minimum maturation is 45 days. When cut, it is medium grain with well-distributed fat. It has an aromatic fragrance, and an intense, sweet and lightly spicy flavour.
RECOMMENDED PAIRINGS: Our Salsiccia Piccante are ideal starters, nibbles and snacks, combined with other deli meats and typical cheeses, and served with naturally leavened bread. We recommend serving it with a still, well-structured red wine such as Cirò di Calabria.
