We are among the few in our sector to have been farming and producing since 1951. Based on ancient knowledge, our tradition of both farming and producing puts us in a position to provide the guarantees of simplicity and food safety we believe to be absolutely essential and indispensable these days.
True pioneers in the field, we launched our organic Linea Primavera Bio range before anyone else, back in 1996. For us, guaranteeing gluten-free products without milk flours and preservatives is more than just how we work: it is who we are and how we think.
Salumificio Pedrazzoli is more or less unique in its field, both in Italy and internationally. A whole world goes into creating each of our products: from our fields where we grow the grain to feed our pigs, to the pastures where our animals grow on free-range farms, to the ancient art of pork butchery which developed here in our region, using only simple and natural raw materials. This is how our products are born: naturally. They develop to be rich in flavour and free from any kind of food adulteration. This is what makes them the perfect ingredients for your recipes, helping you deliver nothing less than “simply gourmet” every time.
THERE ARE NO SECRETS BEHIND OUR QUALITY… OR NOT QUITE…
Most of our products are in fact processed by hand. They are tied in the traditional way: natural casing, jute string and the centuries-old experience passed down to our artisan pork butchers. As well as guaranteeing a natural product, this procedure also ensures our deli meats always look as good as they taste!
Every deli meat product in our factory is allowed the time to mature to its best. Only through prolonged maturation, never forced, do we rediscover the real time it takes to create taste, authenticity and true flavour. For example, our individually numbered, limited production salami are matured for at least 5 months, making them a truly exclusive product.
Salumificio Pedrazzoli products are hand-made in the old-fashioned way from simple, unique ingredients: the right amount of sea salt, an aromatic balance of spices, quality meat and time. All of our products are distinguished by the exclusive use of Italian meat from heavy pigs on our own farms.
Nothing has changed with respect to the past, and the recipes we use are those passed down the generations. Our family has always “cultivated” and preserved the ancient skills of the traditional pork butchers from our region; and today - with as much passion as back then - we deliver these traditional products to our customers, customers with the highest expectations of quality and authenticity in the products they choose.

We have always been one of the few companies in Italy both to raise pigs and process their meat, making us unique in our field. What distinguishes us in particular is our integrated closed-cycle supply chain, which is made up of farms owned by the Pedrazzoli family. This means we can guarantee an extremely high degree of control over our supply chain, enabling: maximum food safety and higher product quality. On our farms, the primary focus is the quality of life and wellbeing of our animals; this translates into an extremely low animal/area ratio, carefully selected feed and respect for the rhythms of nature.
The history of Salumificio Pedrazzoli is the history of our family. The company was founded in 1951 by our grandfather, who, starting out as a worker in a deli meat factory, went on to set up his own company. However, going back to far older generations, our whole family has always reared pigs and produced deli meats, following the ancient traditions of the artisan Italian pork butchers. Now, it falls to the new generations to ensure that these ancient traditions are protected and passed on in their entirety.

This is real quality that we are passing down. Because, knowing how to create something good, knowing how to do it well and in a way that promotes health, these are not things you can just throw together today... There are no secrets to this, just patience and the will to maintain the quality achieved over centuries of producing deli meats... in this way, we are still the same as our artisan ancestors all that time ago.”

This is a 100% Italian Green Strategy which involves adopting good “eco-friendly” practices; from our organic free-range farms to the photovoltaic installation which provides 100% of our power as green energy, to our eco-friendly offices and the eco-compatible FSC certified materials for all our promotional material and packaging.Our drive for 100% sustainability also involves focusing on all forms of sustainability and commitment in the social sphere (from sport and education to ethical and cultural volunteering). We believe that ecological values taken in the broadest sense to mean protecting and enhancing our environment also mean respect and enrichment on a social level, starting with the society we work and live in.
