A journey into the Art of Italian Charcuterie

On June 30th, 2025, a special event took place in Parma: “La Forma del Gusto – Master Tagliere 2025”, an initiative by Salumificio Pedrazzoli to rediscover the culture of the Italian charcuterie board and everything that makes it unique.

A day of knowledge and flavor

This wasn’t just a course—it was a true immersion in tradition, taste, and stories of passion.
Inside the training rooms of the UniSaFo center, professionals from butcher shops, delis, and restaurants all across Italy gathered to learn, share, and—why not—challenge each other with creativity.

The morning opened with the expert voices of Federico Scalici and Carlo Maria Ricci, who led participants on a journey that begins with animal farming and ends—slice by slice—with the perfect charcuterie board.
Stories of supply chains, premium cuts, pairing secrets: a passionate tale that wove together technique and anecdotes, enriched by interactive quizzes to put knowledge immediately to the test.

Then came a delicious break: traditional tortelli d’erbetta from Parma and a tasting of Pedrazzoli’s premium range—a tangible (and tasty) experience of a family tradition now in its fourth generation.

The highlight:
The perfect board challenge

In the afternoon, the Master transformed into a creative arena: 8 teams of professionals competed to craft the ideal charcuterie board.
Not just cured meats: fresh fruit, cheeses, vegetables, dressings, sauces, honey… every element became a building block of a lttle work of art, judged by a technical jury based on taste, presentation, and harmony.

After a thrilling showdown, the winner was Roberto Gritti from Macelleria Magri (Chiuduno, Bergamo), though all participants showcased talent and dedication, creating true masterpieces of flavor.

Behind every slice, a thousand stories

As Emanuele Pedrazzoli reminded everyone at the event’s conclusion, behind every Pedrazzoli product lies much more than just processing: there’s a family, a story made of choices, skilled hands, hard work, and love for doing things right.

That’s what Master Tagliere 2025 was all about:
a moment to share knowledge, strengthen bonds, and carry forward—together with clients and ambassadors—the culture of Italian charcuterie.
