THE ORIGINS OF LA GABBIANELLA

A direct heir to the noble artisanal tradition of the lowlands, this extraordinary creation is far more than just a salami—it’s a one-and-a-half-meter-long experience.

La Gabbianella is also the name of a small locality near our salumificio. Once crisscrossed by canals and now reclaimed for organic farming, it’s a name that speaks of water, transformation, and authentic roots.

The magic of La Gabbianella lies in its delicate balance between salt and meat, a secret preserved for centuries in the lands of the Duchy of Mantua.

At a time when achieving a full-flavored but not overly salty salami was a challenge—excess salt being used to prevent fermentation—a revolutionary technique was developed in the Po Valley. This technique allowed for reduced salt content by leveraging the region’s ideal conditions: perfect humidity, temperature, and airflow. This environmental balance, recreated in our aging cellars, is the foundation of La Gabbianella’s unique character.

THE PRODUCTION PROCESS

Crafted according to Salumificio Pedrazzoli’s traditional recipe, it begins with carefully selected meats from our farms. These are hand-stuffed into a long budello gentile—a natural casing that demands skill and precision. The coarse grind, a hallmark of this salami, creates an authentic texture that enhances the natural flavor of the meat, while a minimum aging period of three months allows the sweet and delicate taste to fully develop.

The result is a vivid red salami, with a lightly aromatic scent that invites tasting and a delicate flavor that speaks of tradition and territory.

Weighing 3 to 4 kg and with an impressive length, La Gabbianella is more than a food product—it’s a true centerpiece of the table.

It is served on its own custom wooden cutting board, creating a convivial moment that fuses beauty and flavor. The perfect pairing? A good glass of red wine, such as a traditional Lambrusco, whose freshness and sparkle enhance the natural sweetness of the salami.
