Crafted according to Ettore’s classic recipe, this organic salami is a masterpiece of balance and craftsmanship.

The finest cuts of our organically raised pigs are coarsely ground and carefully encased in premium gentile natural casing.

The seasoning is simple but essential: just salt and black pepper—whole or crushed. No preservatives. No gluten. No dairy.

Stuffing requires skilled hands to avoid air pockets, which would compromise the final quality.
Aging – a minimum of 50 days in our cellars – is a crucial stage that demands constant care. The large meat mass and high internal humidity make this process especially challenging. But it’s this patient wait that allows the fat and lean to harmonize, creating the perfect balance that defines BioEttore.

The result is a salami with a vibrant red color and a lightly spiced aroma, announcing a sweet, distinctive flavor.

HOW TO SERVE AND ENJOY BIOETTORE

To fully appreciate it, BioEttore salami must be sliced by hand, starting from the bottom and cutting diagonally to obtain longer slices. It’s advisable to leave the casing on until cutting, so its outer aromas can permeate the product as it’s sliced.
