Brado, Organic Prosciutto Crudo: the essence of freedom matured over time
Once upon a time, in the marshy plains of the Po Valley, there lived an ancient wisdom well known to the Romans. Varro, Polybius, and Horace spoke of it with reverence: the art of preserving time in salted hams.
From that millennia-old tradition, preserved in the very words “perex suctum, dried up, or par siut, seems dry” comes our Brado, a tale of freedom and patience that unfolds over 24 months of careful aging.

HOW OUR ORGANIC PROSCIUTTO CRUDO IS MADE
The stars of this story are our pigs, who live in semi-wild conditions for over twelve months, expressing their most authentic nature. Free to roam undisturbed, root around in fields, and develop their natural instincts, they feed on the wild herbs that grow spontaneously in our organic pastures.
This freedom is not only an ethical choice but also a qualitative one: the slower development of their meat makes these pigs particularly well-suited to long aging, creating the perfect conditions for our exceptional prosciutto.
The processing stage respects the product’s purity, using only two ingredients: pork leg and sea salt, carefully measured with ancient wisdom. This minimalist approach enhances the unmistakable flavor that develops during the slow, 24-month maturation in ventilated, low-humidity rooms, where each ham matures at its own natural pace.
Every production step of Brado follows artisanal tradition. Deboning – a delicate phase requiring skill and precision – is done exclusively to order and strictly by hand, to preserve the integrity of the muscle fibers and structure.
