THE ORIGINS OF PADUS
Made from the finest cuts of heavy pigs, raised patiently until they reach 180 kg, Padus is a tribute to rural tradition in its purest and most authentic form.
Faithful to the old principle of using the entire animal, this salami is crafted from all the noble cuts of pork: loin, shoulder, ham, and coppa, just as farmers once did when preparing salami at home—no waste, with deep respect for the raw material. The meat is coarsely ground, a distinctive feature that immediately evokes the artisanal products of ancient Mantuan tradition.
In the name of maximum transparency, every Padus salami carries a unique identification number, telling the full story from the pig’s birth to your table.

THE PRODUCTION PROCESS
The production process is a time-honored ritual. After hot grinding, the meat is marinated and seasoned with simple yet essential ingredients: salt, pepper, garlic, red wine, and selected spices. The mixture rests overnight, allowing the flavors to meld and infuse the fibers.
The next day, the mixture is stuffed into natural casings previously washed with white wine vinegar—a detail that speaks of artisanal care—and then tied and netted by hand with jute string, in a gesture unchanged for generations.
In the humid cellar of Salumificio Pedrazzoli, drying and aging follow slow, natural rhythms. Each Padus rests for at least 4 to 6 months, depending on size and casing thickness. It is this slow aging that gives the salami its unique characteristics: natural red color, a subtle hint of garlic, and a delicately spiced flavor that tells a story of land and tradition.
